Despite health risks, adventurous food lovers are trying raw chicken in Japan
Raw chicken should never be consumed... but people are still trying it. The chicken sashimi dish is called 'torisashi'. Chefs prepare the chicken by cutting thin slices from the inner breast and sear it for 10 seconds. Although this part of the chicken may have a lower risk to salmonella contamination, 10 seconds of boiling isn't enough time to kill the bacteria.
These restaurants say they work with small farms to make sure they have fresh chicken. Better to be safe than sorry. Read more...
